It is funny how memory works and how we will develop our taste for food.

If summer had a taste, it would definitely be S'mores! And I made my version of a fudgy Chocolate Brownie Torte S'mores for you!
It has all the campfire memories that you love, the gooey marshmallows, the melted chocolate, the sweet and salty graham cracker, but you will get the upgraded, grownup dessert version!

I never had a S'mores growing up! Never! It's not a thing we do in Brazil, it's not a treat I grew up with, but my daughter did! And for her, S'mores means summer!

She craves it, she has wonderful memories of making S'mores with her friends and when I told her that I never had one, she bought all the "pieces" and made one for me.
It was winter and we used our fireplace. And I will never forget it!

I might not have the campfire memories from summer nights, but I will always cherish that moment when we were sharing my daughter's tradition. What makes Canada home to her.

Now that I have my memories of S'mores, too, I can share my version of S'mores with you.

Here is a very easy way to dress up your Brownie Torte and give them a taste of summer that will bring the campfire to you!

What you'll need:

  1. Marshmallow Fluff — far superior to regular marshmallows for flavour and texture
  2. Silky Chocolate Sauce — this will take your Torte to another level (and it's a great recipe to keep in your freezer for emergencies 😉)
  3. Graham Cracker Crumble Topping — don't settle for plain crumbs! A proper crumble adds another dimension entirely
  4. The Brownie Torte — classic chocolate fudge, to stay true to the S'mores spirit

Silky Chocolate Sauce

  • 1½ cups Heavy Whipping Cream 35%
  • 2 cups dark chocolate (56% Callebaut or higher, not more than 70%)
  • 3 TBSP condensed milk
  • 2 TBSP butter
  1. Place chocolate in a heatproof bowl.
  2. Bring the heavy cream to a gentle boil, then immediately remove from heat and pour over chocolate. DO NOT STIR. Let stand for one minute.
  3. Add butter. Using a wire whisk, gently stir until fully incorporated.
  4. Stir in the condensed milk.

Graham Cracker Crumble Topping

  • 200g all purpose flour
  • 100g graham cracker crumbs
  • 1 tsp kosher salt
  • 50g dark brown sugar
  • 100g sugar
  • 125g melted unsalted butter
  1. Preheat oven to 350F.
  2. Mix all dry ingredients in a bowl.
  3. Add butter and mix until the mixture holds its shape when squeezed. Add 1–1½ tbsp more butter if needed.
  4. Bake for 15–20 minutes until golden brown. Let cool completely before using.

Assembling your S'mores Torte:

There's no right or wrong here — just have fun! I layered: chocolate sauce → marshmallow fluff → more chocolate sauce → graham crumble topping.
