Silky. Dense. Fudgy. This is the dessert that makes people ask for the recipe before they've even finished their slice.

This Chocolate Mousse Brownie Torte is the ultimate summer showstopper — a rich chocolate mousse that sits somewhere between a pudding and an ice cream, layered over a fudgy brownie base. It's elegant enough for a dinner party and indulgent enough for a Tuesday night.

A few notes before you start:

  • Use at least 56% semi-sweet chocolate — milk chocolate won't set properly
  • The torte can be frozen for up to a month, or refrigerated for 2 days before serving (without the whipped cream topping)
  • Overnight refrigeration develops the flavour beautifully — worth the wait!

Ingredients:

For the brownie base:

  • 1 Chocolate Fudge Brownie Torte, cut in half lengthwise

For the mousse:

  • 200ml heavy cream
  • 2 large egg yolks
  • 200ml evaporated milk
  • 200g sugar
  • 350g semi-sweet chocolate (56% or higher)

For assembling:

  • 150ml heavy cream, whipped with 2 TBSP sugar to soft peaks
  • Chocolate shavings, berries, chocolate ganache to decorate

Directions:

  1. Prepare an 8" springform or removable-bottom pan. Spray with non-stick spray and line the sides with acetate or parchment paper, at least 3" tall.
  2. Cut your brownie in half lengthwise and press it into the base of the pan.
  3. Whip the cold heavy cream to stiff peaks. Refrigerate until needed.
  4. Whisk together the evaporated milk, sugar, and egg yolks in a heavy-bottomed saucepan. Heat over medium-low, stirring constantly, until hot and slightly thickened — do not boil.
  5. Remove from heat and pour over the chocolate. Let stand 1 minute, then whisk gently until smooth.
  6. Fold ¼ of the whipped cream into the chocolate to loosen it, then gently fold in the rest. Don't overwork — you want to keep the air in.
  7. Pour the mousse over the brownie base and refrigerate for at least 3 hours (overnight is best).
  8. Serve topped with soft whipped cream, chocolate shavings, berries, and a drizzle of ganache.
